Ichabod Crane sets his heart on marrying Katrina Von Tassel, who is also favored by Brom Bones.

"From the moment Ichabod laid his eyes upon these regions of delight, the peace of his mind was at an end, and his only study was how to gain the affections of the peerless daughter of Van Tassel." (Irving)

I think that the change in the description is foreshadowing. The description is closely tied into what is happening to Ichabod Crane.  He is going to be in trouble, and the foreboding description warns the reader that Sleepy Hollow is no longer friendly to the gentle schoolmaster.
